Ingredients

Vinaigrette

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic or champagne vinegar
  • 1 tablespoon honey
  • 1/2 shallot, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • Red pepper flakes, to taste
  • Kosher salt and black pepper, to taste

Salad

  • 1 1/2 – 2 cups cherry tomatoes, halved if large
  • 2-3 peaches, sliced into wedges
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese, at room temperature
  • 1/4 cup toasted pumpkin seeds (or other nut/seed)

Instructions

  1. Make the Vinaigrette: In a glass jar, combine the extra virgin olive oil, balsamic or champagne vinegar, honey, finely chopped shallot, grated garlic, lemon zest, chopped basil, oregano, dill, thyme, red pepper flakes, kosher salt, and black pepper. Whisk or shake vigorously until the mixture is smooth and emulsified. Taste and adjust seasoning if needed.
  2. Prepare the Fruit: In a large salad bowl, toss the halved cherry tomatoes, sliced peach wedges, and pitted fresh cherries with one-third of the prepared vinaigrette. Let the mixture macerate at room temperature for 15 minutes, or refrigerate for up to 4 hours for the flavors to meld.
  3. Assemble the Salad: Tear or break the burrata cheese into pieces and gently distribute it on top of the dressed fruit salad. Drizzle the remaining vinaigrette over the salad to add extra flavor.
  4. Garnish and Serve: Sprinkle the toasted pumpkin seeds evenly over the salad along with any additional fresh herbs if desired. Serve immediately, ideally with grilled or toasted bread on the side for a complete dish.
