Experience the irresistible flavor of Tony’s Melt-In-Your-Mouth Grilled Brussels Sprouts, a perfectly charred and tender vegetable side dish featuring fresh brussels sprouts and sweet yellow onions, seasoned with garlic and olive oil, then grilled to smoky perfection in foil packets.

Ingredients

Vegetables

  • ½ pound brussels sprouts, cut in half
  • ½ yellow onion, cut into thick slices

Seasonings & Oils

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt, plus more to taste
  • Freshly ground pepper, to taste

Instructions

  1. Preheat the Grill: Preheat your grill to 400 degrees Fahrenheit to prepare for cooking the brussels sprouts and onions over direct heat.
  2. Prepare the Vegetables: Wash the brussels sprouts thoroughly and pat them dry to ensure even cooking. Cut the brussels sprouts in half and slice the yellow onion into thick pieces.
  3. Season the Vegetables: Place the brussels sprouts and onion slices in a large bowl. Drizzle with olive oil, then sprinkle garlic powder, salt, and freshly ground pepper over the vegetables. Toss gently to evenly coat all pieces with the seasoning and oil.
  4. Assemble the Foil Packet: Lay out a large piece of aluminum foil and spread the seasoned brussels sprouts and onions in the center. Cover with another large piece of foil and seal the edges by folding them tightly together to create a packet. Use a fork or knife to poke a small hole at the top of the foil packet to allow steam to escape during grilling.
  5. Grill the Packet: Place the foil packet directly over the grill’s heat source. Grill for approximately 20-25 minutes, turning the packet once halfway through if desired, until the brussels sprouts are tender and slightly charred.
  6. Serve: Carefully remove the packet from the grill and open it cautiously to avoid steam burns. Serve the grilled brussels sprouts and onions immediately, adding additional salt and pepper to taste.

Notes

  • Ensure the brussels sprouts are cut into halves to ensure even cooking inside the foil packet.
  • If you don’t have a grill, you can roast the packet in a 400°F oven for similar results, cooking for about 25-30 minutes.
  • For added flavor, consider sprinkling with grated Parmesan or a squeeze of fresh lemon juice before serving.
  • Be cautious when opening the foil packet as hot steam will escape.
  • This recipe works well as a side dish for grilled meats or a vegetarian meal.
