Layered with tangy Greek yoghurt and tropical passionfruit, these popsicles offer a vibrant and healthy frozen treat that’s ideal for cooling off during warm days.

Ingredients

Smoothie Base

  • 1 cup coconut milk
  • 2 cups frozen bananas
  • 1 cup chopped mango
  • 1 cup chopped pineapple
  • 2 tablespoons cashew nuts
  • 2 tablespoons mixed seeds
  • 1-2 tablespoons honey (to taste)
  • 1 teaspoon lime juice

Yoghurt Layer

  • 1 cup Greek yoghurt
  • 2 tablespoons honey

Passionfruit Layer

  • 4 passionfruit (pulp and seeds removed)

Instructions

  1. Prepare the Tropical Smoothie: Blend together the coconut milk, frozen bananas, chopped mango, chopped pineapple, cashew nuts, mixed seeds, honey, and lime juice until you achieve a smooth, creamy consistency.
  2. Mix the Yoghurt and Honey: In a separate bowl, combine the Greek yoghurt with honey, stirring well to create a sweet and tangy yoghurt layer.
  3. Assemble the Popsicles: In popsicle moulds, layer the blended tropical smoothie, followed by a layer of passionfruit pulp, and then the honeyed Greek yoghurt. Repeat if the mould allows, ensuring an appealing layered effect. Insert popsicle sticks carefully into each mould.
  4. Freeze the Popsicles: Place the filled moulds in the freezer and allow them to freeze solid for at least 4 hours before serving.

Notes

  • Use ripe but not overly soft fruit to ensure the best texture and sweetness.
  • Adjust the honey quantity based on the sweetness of the fruit and your preference.
  • For a creamier texture, full-fat coconut milk is recommended.
  • To remove passionfruit pulp more easily, cut the fruit in half and scoop with a spoon.
  • Ensure the popsicle sticks are fully inserted to make removing easier once frozen.
