The Ultimate Tuna Melt Wrap is a quick and delicious dinner option featuring a savory tuna salad with gherkins, sundried tomatoes, and creamy mayonnaise, all wrapped in a warm wheat tortilla with fresh spinach, bell pepper, and melted Cheddar cheese. Ingredients

Tuna Mix

  • 1 tin of tuna (145g, in brine or spring water, drained)
  • 2 tbsp mayonnaise
  • 1-2 gherkins (finely chopped)
  • 4 sundried tomatoes (in oil, drained, finely chopped)

Wrap and Fillings

  • 2 wheat tortilla wraps (large, 10in)
  • handful of spinach
  • 1/4 bell pepper (thinly sliced)
  • 70 g Cheddar cheese (coarsely grated)

Instructions

  1. Prepare the Tuna Mix: In a bowl, combine the drained tuna, finely chopped gherkins, sundried tomatoes, and mayonnaise. Season the mixture with salt and freshly ground black pepper to taste, and mix thoroughly.
  2. Assemble the Wraps: Place a wheat tortilla wrap flat on a clean surface. Arrange a vertical line of fresh spinach down the center of the wrap. Spoon half of the tuna mixture evenly over the spinach, layer with thinly sliced bell pepper, and generously cover everything with coarsely grated Cheddar cheese.
  3. Fold the Wraps: Fold the top and bottom edges of the tortilla over the filling, then fold the sides inwards to create a secure wrap. Aim to keep the wrap relatively flat rather than round for even grilling.
  4. Heat the Pan: Brush a griddle pan or non-stick frying pan lightly with oil and heat it over medium-high heat. This will ensure a crispy, golden exterior on the wrap.
  5. Grill the Wraps: Place the assembled wraps on the hot pan. To help them stay flat and cook evenly, place a heavy pan such as a cast iron skillet on top of the wraps. Fry each side for about 2-3 minutes until golden brown and crispy lines appear. Carefully flip and repeat on the other side.
  6. Serve: Once grilled to perfection, remove the wraps from the pan, cut each in half for easier handling, and serve warm. Pair with your favorite salad for a complete meal.
