These Vegan Almond Flour Cookies are a delightful small batch treat, perfectly crisp on the edges with a chewy center, made with simple wholesome ingredients like almond flour and natural sweeteners. They’re easy to prepare and bake, making them an ideal guilt-free snack or dessert for anyone following a vegan or gluten-free lifestyle.

Ingredients

Dry Ingredients

  • 100 grams almond flour (approx. 1 scant cup, not almond meal)
  • 1 tablespoon unrefined coconut sugar (or brown sugar)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt

Wet Ingredients

  • 2-3 tablespoons maple syrup (start with 2 tablespoons and add more if needed)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (176°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a medium bowl, combine the almond flour, coconut sugar, baking powder, and sea salt until evenly blended for a balanced flavor and texture.
  3. Add Maple Syrup and Combine: Pour in 2 tablespoons of maple syrup. Use a fork to mix thoroughly until you achieve a slightly sticky batter. If the batter feels too dry, add up to 1 more tablespoon of maple syrup to reach the right consistency.
  4. Shape the Cookies: Roll the batter into one-inch balls, or use a small cookie scoop for uniform size. Place them spaced at least 2 inches apart on your prepared baking sheet to allow for spreading.
  5. Bake the Cookies: Bake in the preheated oven for approximately 13 to 15 minutes, or until the edges turn lightly golden brown.
  6. Cool Down: Remove the cookies from the oven and let them cool on the baking sheet for at least 10 minutes to set. Then transfer them to a wire rack to cool completely before serving.

Notes

  • Use almond flour, not almond meal, for best texture.
  • Adjust maple syrup quantity to achieve desired batter stickiness.
  • Do not overcrowd the baking sheet; space cookies properly for even baking.
  • Allow cookies to cool fully to firm up before handling.
  • Store cookies in an airtight container at room temperature for up to 3 days or in the fridge for longer freshness.
