Ingredients

For the Cake:

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup vegan butter, melted
  • 1 cup unsweetened plant milk
  • 1 tbsp white vinegar
  • 2 tsp vanilla extract

For the Frosting:

  • ¼ cup vegan butter, softened
  • 1 cup powdered sugar
  • 1-2 tbsp plant milk
  • 1 tsp vanilla extract

For Decoration:

  • 12 oz vegan white chocolate, melted
  • 10 oz vegan dark chocolate, melted
  • Sprinkles of choice
  • Cake pop sticks

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F and lightly grease an 8-inch cake pan to prevent sticking.
  2. Create Vegan Buttermilk: In a small bowl, combine the plant milk and white vinegar. Let it sit for 5 minutes until it curdles slightly, simulating buttermilk.
  3. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until evenly combined.
  4. Add Wet Ingredients: Pour in the melted vegan butter, vanilla extract, and the prepared vegan buttermilk mixture. Stir until the batter is smooth with no dry flour visible.
  5. Bake the Cake: Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before proceeding.
  6. Prepare Frosting: Beat the softened vegan butter until smooth. Gradually add powdered sugar, vanilla extract, and plant milk until a creamy, soft frosting forms.
  7. Form Cake Pop Mixture: Crumble the cooled cake into fine crumbs using your hands or a fork. Add a few spoonfuls of frosting and mix gently until the texture resembles soft cookie dough that holds together when pressed. Avoid overmixing.
  8. Shape Cake Balls: Roll the mixture into small, even balls and place them on a parchment-lined tray. Chill for 30-45 minutes until firm.
  9. Insert Sticks: Dip the tip of each cake pop stick into melted chocolate, then insert it halfway into each cake ball. Chill again for 10 minutes to secure.
  10. Coat with Chocolate: Dip each cake pop into melted chocolate, gently tapping off excess coating. Immediately decorate with sprinkles of choice.
  11. Set the Cake Pops: Stand the coated cake pops upright in a foam block or tall glass and let the chocolate fully set before serving.

Notes

  • Ensure the cake is completely cool before crumbling to avoid a sticky mixture.
  • Do not overmix the cake crumb and frosting mixture; it should hold together but remain soft.
  • For a uniform appearance, roll cake balls to roughly the same size.
  • Use good-quality vegan chocolate for a richer flavor and better coating consistency.
  • Store finished cake pops refrigerated in an airtight container; consume within 3-4 days for best freshness.
