Ingredients

Cauliflower Wings

  • 1 small cauliflower, cut into small bite-sized florets

  • 1.5 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sea salt

  • 3/4 cup unsweetened cashew milk (or milk of choice)
  • 1/2 cup water
  • 1/4 cup white vinegar

Buffalo Wing Sauce

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon sea salt
  • 3 tablespoon tomato paste

Dairy-Free Ranch Dressing

  • 1 recipe dairy-free ranch dressing (prepared separately)

Instructions

  1. Prepare Ranch Dipping Sauce: Soak cashews according to your ranch dressing recipe, then prepare the dressing and refrigerate until ready to serve.
  2. Preheat Oven and Prepare Tray: Line a baking tray with parchment paper and preheat your oven to 450°F (232°C).
  3. Make Batter and Coat Cauliflower: In a large bowl, add the cut cauliflower florets. In another bowl, mix brown rice flour with garlic powder, onion powder, paprika, cumin, sea salt, black pepper, and cayenne pepper. Add cashew milk and water to the dry ingredients to make a smooth batter. Pour the batter over the cauliflower and toss until all florets are evenly coated.
  4. Bake Cauliflower: Arrange the coated cauliflower in a single layer on the prepared baking tray. Bake for 20 minutes, flipping the pieces halfway through for even cooking.
  5. Prepare Buffalo Sauce: While baking, combine paprika, garlic powder, cayenne pepper, sea salt, tomato paste, and white vinegar in a small saucepan. Whisk and simmer over medium heat for 3-5 minutes to blend flavors.
  6. Coat and Finish Baking: Remove the cauliflower from the oven. Using a silicone brush, generously coat each floret with the buffalo sauce. Return to the oven for an additional 10-15 minutes, flipping once halfway through to ensure an even, crispy finish.
  7. Serve: Serve hot with the prepared dairy-free ranch dressing for dipping.
  8. Air Fryer Instructions: Repeat steps 3 and 5 to prepare cauliflower and sauce. Place coated florets into the air fryer basket. Air fry at 390°F (199°C) for 20 minutes, shaking the basket every 5 minutes. Brush florets with buffalo sauce, then continue air frying for another 10-15 minutes, shaking or flipping halfway through for even cooking. Serve with ranch dressing.
