This Vegetarian Guacamole is a quick and fresh avocado-based dip loaded with vibrant vegetables and zesty lime juice. Perfect for snacking or entertaining, it combines creamy avocados with crunchy bell peppers, Roma tomatoes, and a kick of jalapeño, balanced by cilantro and lime. Ready in just 10 minutes, it’s an easy and healthy addition to any meal or party spread.

Ingredients

Vegetables and Herbs

  • 3 large avocados
  • 2 tablespoons red onion, minced
  • 2 tablespoons jalapeño, minced
  • ¼ cup bell peppers, diced
  • ¼ cup Roma tomatoes, diced
  • 1 tablespoon cilantro, minced

Additional Ingredients

  • Juice of 1 lime
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the avocados: Slice the avocados in half and remove the pits. Scoop out the flesh into a large mixing bowl and mash thoroughly using a potato masher or fork until creamy but still slightly chunky.
  2. Mix vegetables and seasoning: Add the minced red onion, jalapeño, diced bell peppers, diced Roma tomatoes, and minced cilantro to the mashed avocado. Stir well to combine all the ingredients evenly.
  3. Add lime and seasonings: Squeeze the juice of one lime over the mixture to add acidity and brightness. Season with sea salt and black pepper according to your taste preferences, then mix again to distribute the flavors.
  4. Serve: Transfer the guacamole to a serving dish and enjoy immediately with tortilla chips, fresh vegetables, or as a topping for your favorite dishes.

Notes

  • For a spicier guacamole, add more jalapeño or include some seeds.
  • Use ripe but firm avocados for the best texture.
  • To keep guacamole from browning, cover tightly with plastic wrap pressed directly on the surface and refrigerate until serving.
  • Fresh lime juice is preferable over bottled for the best flavor.
  • Adjust salt and pepper gradually to suit your taste.
