A refreshing Watermelon Feta Basil Salad combining sweet, juicy watermelon cubes with salty feta cheese, fresh herbs, and a tangy dressing. Perfect for a light summer appetizer or side dish, this salad offers a delightful balance of flavors and textures, featuring crisp cucumber slices, aromatic basil and mint, all tossed in a zesty olive oil and lime dressing.

Ingredients

Salad Ingredients

  • 8 cups (1/2 medium) fresh watermelon, cut into 1-inch cubes
  • 4 ounces feta cheese, cubed or crumbled
  • 2 tablespoons fresh basil, julienned (plus more for garnish)
  • 1 tablespoon fresh mint, julienned
  • 1 English cucumber, halved lengthwise and cut into half moons

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice (about 1/2 a lime)
  • 1 tablespoon champagne vinegar
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon kosher salt
  • Pinch of fresh cracked black pepper

Instructions

  1. Prepare the Watermelon: Cut the watermelon into 1-inch cubes, removing any seeds. For best flavor and texture, refrigerate the cubed watermelon for a few hours or overnight, then drain any excess juices before assembling the salad.
  2. Combine Salad Ingredients: In a large bowl, add the chilled watermelon cubes along with the feta cheese, julienned basil, fresh mint, and the sliced English cucumber cut into half moons.
  3. Make the Dressing: In a small bowl, whisk together olive oil, lime juice, champagne vinegar, honey (or maple syrup), kosher salt, and freshly cracked black pepper until well combined.
  4. Toss and Serve: Drizzle the dressing over the salad ingredients and toss gently to coat evenly. Garnish with additional fresh basil and cracked black pepper. Serve immediately for the freshest taste. If preparing ahead, store the watermelon separately and add it just before serving to prevent excess moisture.

Notes

  • Prepare the watermelon in advance and keep it chilled for a cooler, more refreshing salad. Remember to drain excess juice to avoid a watery salad.
  • Using fresh herbs like basil and mint adds aromatic flavor, but you can adjust the quantities to your taste.
  • To make the dressing vegan, substitute honey with maple syrup.
  • Store watermelon separately if making the salad ahead to preserve texture and avoid sogginess.
