These refreshing Watermelon Popsicles are an easy, healthy treat perfect for hot days. Using fresh, seedless watermelon, you can create fun shapes or wedges, freeze them on sticks, and enjoy a naturally sweet and hydrating snack. Instructions

  1. Prepare the watermelon: Using a sharp chef’s knife, cut off the stem end and opposite end of the watermelon. Stand the watermelon upright on a flat cut side, then slice it in half down the middle. Place one half flat-side down on the cutting board.
  2. Cut shapes or wedges: For cookie-cutter shapes, slice the watermelon into ½-inch thick slabs and press the cookie cutter down to create shapes. For wedges, slice lengthwise to desired sizes, then cut across into ½-inch wide wedges. For long strips, cut lengthwise into 4 to 5 segments and then crosswise into ½-inch wide strips.
  3. Insert popsicle sticks: Insert popsicle sticks about ¾-inch into the base center of each watermelon shape or wedge to form the popsicles.
  4. Arrange for freezing: Line a tray or baking dish with parchment paper and arrange the watermelon pieces in a single layer, leaving space between to avoid sticking. For multiple layers, add parchment paper between layers.
  5. Freeze: Place the tray in the freezer and freeze until solid, about 4 hours.
  6. Store and serve: Transfer frozen popsicles to a freezer bag to prevent freezer burn and store for up to 3 months. Enjoy directly from the freezer or let them sit at room temperature briefly or microwave for 10 seconds to soften. Optionally, serve with lime wedges or sprinkle chili-lime seasoning on top.
