Ingredients

Dry Mix

  • 2 cups Whole Wheat Flour
  • 1/2 cup Brown Sugar
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 teaspoons Cinnamon

Wet Ingredients for Muffin

  • 1/2 tablespoon Butter
  • 1/4 cup Milk
  • 1/4 teaspoon Vanilla Extract
  • 1/2 of an Egg (beaten)

Optional

  • 1/8 cup Frozen Berries (optional, to stir in before cooking)

Instructions

  1. Prepare Dry Mix: Whisk together whole wheat flour, brown sugar, baking powder, salt, and cinnamon in a bowl, breaking up any clumps of sugar. Store this dry mix in the fridge for future use.
  2. Melt Butter: Place 1/2 tablespoon butter in a microwave-safe mug and microwave for 20 seconds until melted.
  3. Add Dry Mix and Liquids: To the melted butter in the mug, add 1/3 cup of the dry mix, 1/4 cup milk, and 1/4 teaspoon vanilla extract.
  4. Incorporate Egg: In a separate bowl, gently beat an egg and add half of the beaten egg to the mug. Whisk all the ingredients together until well combined. Save or discard the remaining half of the egg.
  5. Add Optional Berries: If desired, gently fold in 1/8 cup frozen berries before cooking. This will add moisture and flavor to your muffin.
  6. Microwave Cooking: Microwave the mug mixture for about 1 minute and 30 seconds, or until the muffin springs back when lightly pressed on top. If you added berries, increase the cooking time by 15-30 seconds to compensate for extra moisture.
