A delightful homemade zucchini goat cheese pizza featuring a tender, buttery crust with a flavorful topping of sautéed zucchini, red onion, tangy pizza sauce, fresh diced tomatoes, and creamy goat cheese. Perfect for a light yet satisfying meal that combines fresh vegetables with rich cheese on a crisp baked dough.

Ingredients

Pizza Dough

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • 4 tablespoons butter, cut into 4 cubes
  • ½ cup milk

Pizza Toppings

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ small red onion, thinly sliced
  • 2 small zucchini, thinly sliced
  • Salt and pepper, to taste
  • ½ cup pizza sauce
  • 1 can (15 ounces) diced tomatoes, well drained
  • 1 cup crumbled goat cheese

Instructions

  1. Prepare the Pizza Dough: Place flour, baking powder, and salt into a food processor and pulse three times to combine. Add the butter cubes and continue processing until the mixture resembles breadcrumbs. Gradually add milk, just enough to form a soft dough, which may vary slightly from the ½ cup. Remove and knead the dough on a floured surface for one minute until smooth. Roll it out into a 10-inch round and place it on a lightly greased baking sheet.
  2. Preheat the Oven: Set your oven to 425ºF (220ºC) to ensure it is hot and ready for baking the pizza.
  3. Sauté the Vegetables: Heat olive oil in a pan over medium heat. Add minced garlic, thinly sliced red onion, and zucchini. Season with salt and pepper and cook for a few minutes, stirring occasionally, until the vegetables are softened but still retain some texture. Remove from heat.
  4. Assemble the Pizza: Spread the pizza sauce evenly over the prepared dough base. Layer the drained diced tomatoes on top of the sauce, followed by the sautéed zucchini and onion mixture. Finally, sprinkle the crumbled goat cheese evenly over the vegetables.
  5. Bake the Pizza: Place the assembled pizza in the preheated oven and bake for 20 to 25 minutes, or until the crust turns golden brown and the cheese is slightly melted and bubbly.
  6. Rest and Serve: Remove the pizza from the oven and let it rest for a few minutes to set. Slice and serve warm, enjoying the combination of fresh vegetables and creamy goat cheese on a crispy, buttery crust.

Notes

  • If making the dough by hand, mix the dry ingredients, cut in the butter with a pastry cutter or fork until crumbly, and then slowly add milk until a soft dough forms.
  • Ensure the diced tomatoes are well-drained to prevent the pizza from becoming soggy.
  • You can substitute goat cheese with feta or mozzarella if preferred.
  • To add extra flavor, sprinkle fresh herbs like basil or oregano before baking or after the pizza is out of the oven.
  • The pizza is best served fresh but can be refrigerated and reheated the next day.
