This easy no-cook appetizer features refried beans, creamy sour cream, spicy hot sauce, fresh guacamole, cheddar cheese, diced tomatoes, black olives, green onions, and cilantro layered beautifully in a casserole dish for a colorful and flavorful dip.

Ingredients

Bean Layer

  • 2 (16-ounce) cans refried beans
  • 2 tablespoons sour cream
  • 1 to 2 tablespoons hot sauce (such as sriracha)

Middle Layers

  • 3 cups guacamole
  • ½ cup sour cream (for layering)
  • 2 cups shredded cheddar cheese

Toppings

  • 3 Roma tomatoes, diced
  • ½ cup sliced black olives
  • 3 green onions, thinly sliced
  • ¼ cup finely chopped fresh cilantro

Instructions

  1. Make the bean mixture: In a large mixing bowl, combine the refried beans with 2 tablespoons of sour cream and 1 to 2 tablespoons of hot sauce. Stir or use a hand mixer to blend until the mixture is smooth and creamy.
  2. Layer the beans: Spread the prepared bean mixture evenly on the bottom of a 9×13-inch casserole dish to form the first layer.
  3. Layer guacamole and sour cream: Spread 3 cups of guacamole evenly over the bean layer, then carefully spread ½ cup of sour cream on top of the guacamole to create the second and third layers.
  4. Layer cheese, olives, and tomatoes: Sprinkle 2 cups of shredded cheddar cheese evenly over the sour cream layer. Top the cheese with diced Roma tomatoes and sliced black olives, distributing them evenly.
