Instructions

  1. Prepare the frittata mixture: In a medium bowl, whisk together the eggs, milk, salt, and pepper until fully combined and slightly frothy. Stir in the diced bell peppers, onion, spinach, and shredded cheddar cheese.
  2. Cook the frittata: Heat olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook without stirring for about 4-5 minutes, until the edges begin to set. Reduce heat to low, cover the skillet, and cook for an additional 5 minutes or until the eggs are fully set and cooked through.
  3. Cool and slice: Remove the frittata from the skillet and let it cool slightly. Once cooled, cut it into halves or quarters suitable for sandwich portions.
  4. Toast the bread: Butter one side of each bread slice. Heat a clean skillet over medium heat and toast the bread slices, butter side down, until golden brown and crispy. Remove from heat.
