Ingredients

Chicken and Marinade

  • 1 1/2 lb boneless skinless chicken breasts, cut into 1-inch cubes

  • 2 tablespoons peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 2 teaspoons sesame oil
  • 2 teaspoons honey
  • 2 teaspoons grated ginger
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper

  • Peanut dipping sauce (prepared separately)

Instructions

  1. Prepare the Chicken: Place the chicken cubes into a large bowl or a ziplock bag ready for marinating.
  2. Make the Marinade: In a small bowl, whisk together soy sauce, peanut butter, rice vinegar, lime juice, sesame oil, honey, grated ginger, minced garlic, crushed red pepper, and salt and pepper until smooth and combined. Reserve 2 tablespoons of this marinade for basting during grilling.
  3. Marinate the Chicken: Pour the remaining marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, preferably up to overnight for best flavor infusion.
  4. Prepare the Skewers: If using wooden skewers, soak them in warm water for 30 minutes to an hour to prevent burning during grilling. Thread about 5 pieces of marinated chicken onto each skewer.
  5. Preheat the Grill: Heat your grill or grill pan to medium-high heat and lightly spray the grates with non-stick spray to avoid sticking.
  6. Grill the Chicken: Place the chicken skewers on the grill and cook for 5 to 6 minutes per side. While grilling, brush the chicken with the reserved marinade to keep it moist and flavorful. Cook until the internal temperature reaches 165°F measured with a meat thermometer.
