This Chunky Tzatziki Cucumber Salad is a refreshing and vibrant Mediterranean-inspired dish featuring crisp cucumbers, tangy feta, and a creamy homemade tzatziki sauce made with Greek yogurt, fresh herbs, and garlic. Perfect as a light side or a dip with pita chips, this salad comes together quickly with no cooking required, making it ideal for warm days or easy entertaining.

Ingredients

Tzatziki Sauce

  • 1/2 cup plain, non-fat Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1-2 cloves garlic, minced
  • Salt, to taste

Salad

  • 2 cups small diced cucumber (English cucumbers preferred)
  • 1/3 cup small diced red onion
  • 1/2 cup small diced or crumbled feta cheese
  • Pita chips for serving, optional

Instructions

  1. Prepare the tzatziki sauce: In a large bowl, whisk together the Greek yogurt, fresh lemon juice, extra virgin olive oil, chopped dill, chopped mint, minced garlic, and salt until fully combined. Taste the sauce and adjust the salt if needed.
  2. Combine salad ingredients: Add the diced cucumbers, red onion, and crumbled feta cheese to the bowl with the tzatziki sauce. Gently mix everything together ensuring the cucumbers and onion are well coated.
  3. Serve or chill: Serve the chunky tzatziki cucumber salad immediately for a fresh and crisp texture, or refrigerate until ready to enjoy. For additional texture and flavor, serve with pita chips on the side for dipping.

Notes

  • English cucumbers are preferred for their thin skin and fewer seeds, but regular cucumbers can be used if peeled and seeded.
  • You can adjust the amount of garlic according to your preference for a milder or stronger garlic flavor.
  • To reduce the salad’s moisture, lightly drain the diced cucumbers before mixing with tzatziki.
  • For a richer taste, full-fat Greek yogurt can be used instead of non-fat.
  • This salad is best served fresh but can be stored in the refrigerator for up to one day.
