Ingredients

Apple Filling

Instructions

  1. Preheat and Prepare Apples: Preheat your oven to 375°F (190°C). In a large bowl, combine melted coconut oil, coconut sugar, cinnamon, and salt, mixing until well blended. Add the apple slices and toss until every slice is evenly coated with the mixture.
  2. Cut and Assemble Pie Bites: Roll out your pie crust to about 1/8 inch thickness. Using a 2-inch round cookie cutter, cut out circles of dough. Place one coated apple slice in the center of each dough circle, then carefully fold the dough around the apple so the edges meet in the middle, pressing them together to seal the pie bite.
  3. Prepare for Baking: Arrange the assembled apple pie bites on a large baking sheet lined with a non-stick mat or parchment paper. Brush the tops of each bite with almond milk (or egg wash for non-vegan versions) and sprinkle with raw sugar to add a crunchy sweetness.
