Ingredients

For the Chicken Marinade

  • 4 boneless skinless chicken breasts

  • 1 tsp dried oregano

For the Tomato Bruschetta

  • 1 clove garlic, minced
  • 1/2 Tbsp olive oil
  • 1/4 cup fresh basil, chopped (or more to taste)
  • Salt and pepper to taste

For Assembly

  • 4 slices mozzarella cheese
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, lemon juice, dried oregano, dried basil, salt, and black pepper until fully combined.
  2. Marinate the Chicken: Season chicken breasts with additional salt and pepper on both sides. Place the chicken in a shallow dish or a 1-gallon sealable plastic bag and pour the marinade over, ensuring each piece is thoroughly coated. Seal and refrigerate for at least 1 hour, up to 12 hours, to enhance flavor and tenderness.
  3. Make the Bruschetta Topping: While the chicken marinates, slice the tomatoes and combine them in a bowl with minced garlic, olive oil, chopped basil, and salt and pepper to taste. Let this mixture sit and marinate as well to meld the flavors.
  4. Grill the Chicken: Preheat a grill or grill pan over medium-high heat until hot. Remove chicken from marinade, discarding the marinade. Place the chicken on the grill and cook for 5 to 6 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink in the center.
