Ingredients
Sausage
1 Polska Kielbasa Sausage, sliced
Vegetables
1 cup sliced yellow onion
2 garlic cloves, minced
1 cup sliced carrots
1 cup sliced celery
1 cup sliced bok choy
½ cup diced mushrooms
½ cup sliced bell peppers
1 cup sugar peas
Other
1 tablespoon olive oil
⅓ cup teriyaki sauce
2 cups cooked rice
Instructions
Heat Oil: Add 1 tablespoon of olive oil to a large sauté pan over medium heat, allowing it to warm up evenly.
Sauté Onion: Stir in the sliced yellow onion and cook until translucent, about 5 minutes, to develop sweetness and soften the texture.
Add Garlic: Add the minced garlic to the pan and sauté for an additional minute until fragrant.
Cook Carrots and Celery: Stir in the sliced carrots and celery, sautéing for a couple of minutes to slightly soften while maintaining crunch.
Add Remaining Vegetables and Sausage: Incorporate the bok choy, mushrooms, bell peppers, sugar peas, and sliced Polska Kielbasa sausage into the pan. Sauté until the vegetables are tender-crisp (al dente) and the sausage is heated through.
Season with Teriyaki Sauce: Pour in the ⅓ cup of teriyaki sauce, stirring well to coat all ingredients and warming through to meld flavors.
Serve: Spoon the stir fry over 2 cups of cooked rice and enjoy immediately while hot.
Notes
You can substitute the Polska Kielbasa with other smoked sausages or kielbasa varieties if desired.
Adjust the amount of teriyaki sauce based on your preferred saltiness and sweetness level.
For a gluten-free version, verify the teriyaki sauce is gluten-free or use tamari sauce as a substitute.
Vegetables can be customized based on what you have on hand; snap peas and bok choy add nice crunch and freshness.
Cooked rice can be replaced with quinoa or cauliflower rice for lower carb options.
